Parsley Persillade

This sauce originates in France and is wonderful on fish, chicken, pasta and many vegetables. It freezes well in ice cube trays.

Ingredients

2 Cups fresh parsley chopped ((or 1 cup parsley, 1 cup cilantro))
¹⁄₃ Cup olive oil
2 Cloves garlic, chopped
1 Pinch lemon zest ((generous pinch))

Instructions

1. Mix all ingredients in the food processor.
2. Serve on your favorite dish.
