Chive and Lemon Vinaigrette

Description

A simple vinaigrette made with fresh chives, lemon zest and lemon juice. Perfect for a light and refreshing green salad.

Ingredients
  • 1/3 Cup canola oil
  • 2 Tbsp lemon juice
  • 1 tsp lemon zest
  • 1 Tbsp honey
  • 1/2 Tbsp Dijon mustard
  • 1 Tbsp fresh chives, chopped
  • salt & pepper to taste
Instructions

    1. In a jam jar, add all ingredients.
    2. Screw lid on jar and shake vigorously to combine ingredients.
    3. Taste and adjust seasoning.
    4. Drizzle over salad greens.
    5. Keep vinaigrette in refrigerator for up to 5 days.
    We mixed some of this vinaigrette into plain white rice - wow it was fantastic! I can imagine this over steamed veggies or roasted potatoes too.
