Herb-Grilled Chicken with Blackberry Bourbon Glaze

Blackberry Bourbon Glaze

Instructions

    • Marinate the Chicken by combining olive oil, thyme, rosemary, garlic, salt, pepper, and
      lemon juice. Coat the chicken and marinate for at least 30 minutes.

    • Glaze: In a saucepan over medium heat, combine blackberries, bourbon, honey,
      balsamic vinegar, salt, and pepper. Simmer for 10–15 minutes, mashing berries slightly.
      Strain if desired.

      Heat a grill or grill pan over medium-high heat. Cook chicken for 5–6 minutes per side,
      brushing with glaze in the last few minutes.
      Internal temperature must be 165 degrees.
      Serve extra glaze on the side.
