Glazed Potato Chips

  1. Preparation:
    Preheat oven to 250 degrees. Line bottom and sides of a large baking sheet with foil.
    Evenly grease foil with butter, or coconut oil.
    Melt butter in large saucepan; stir in honey, sugar, and salt. Bring to boil; stir constantly.
    Reduce heat to medium; boil without stirring for 5 minutes. Remove from heat; quickly
    stir in soda. Arrange chips in a single layer on the prepared baking sheet. Working
    quickly pour syrup over chips then toss and stir using a light motion so as not to break
    up chips but working to coat each chip with a little syrup. Don’t stress if some chips
    have very little glaze. Baking will soften glaze and the stirrings will help to coat each
    chip.
    Bake for 45 minutes; stir every 15 minutes with spatula. Scrape honey mixture from pan
    and coat chips as best as possible. After time has elapsed, remove from oven; cool.
    Break into individual chips, and clumps. Store in tightly covered container.

    NOTE: Tested with Mikesell’s Groovy low fat, lightly salted potato chips.
