Chicken
6pcs bone-in skinless chicken thighs
1/4cup olive oil
2TB fresh thyme, chopped
1TB fresh rosemary, chopped
3cloves garlic, minced
1tsp salt
1tsp black pepper
1pc lemon, juiced
Blackberry Bourbon Glaze
1 1/2cups fresh blackberries
1/4cup bourbon
1/4cup honey
1TB balsamic vinegar
1/2tsp salt
1/2tsp black pepper
Instructions

Marinate the Chicken by combining olive oil, thyme, rosemary, garlic, salt, pepper, and lemon juice. Coat the chicken and marinate for at least 30 minutes.
Glaze: In a saucepan over medium heat, combine blackberries, bourbon, honey, balsamic vinegar, salt, and pepper. Simmer for 10–15 minutes, mashing berries slightly. Strain if desired.
Heat a grill or grill pan over medium-high heat. Cook chicken for 5–6 minutes per side, brushing with glaze in the last few minutes. Internal temperature must be 165 degrees. Serve extra glaze on the side.
